Meal Plan Monday

It's a week of new recipe's and old favorites around here!

Monday: Red Lentil Dahl
Tuesday: Crock Pot Jambalaya
Wednesday: Glazed Salmon Bundles with roasted broccoli (I am sure that sesame bok choy would be good too, I've just never made it!)
Thursday: Pulled Pork Sandwiches and coleslaw
Friday: Fish & Chips
Saturday: Homemade Pizza (maybe)

And for a snack this week: Creamy Cantaloupe Popsicles (I know it's winter, but it's not that cold where I live....also, preparing for my warm weather vacation by eating popsicles!)

Update! Here's the recipe for pulled pork sandwiches, from me & my dad.

Pork Rub
1/4 c pepper
1/4 c paprika
1/4 c brown sugar
2 TBSP salt
2 tsp dried mustard
1 tsp cayenne pepper

Rub this over your pork roast (You won't use it all, so save the rest in an airtight container). You can use any type of pork roast, but I like boneless shoulder roasts.

Bake uncovered,  fatty side up, at 250* for 8 hours.

Shred meat with two forks, mix in some of your favorite BBQ sauce, and serve on a bun. Delish!

  1. Good menus. What haven't you made before? I am interested in the Jambalaya but seems to call for lots of meat ingredients. Which to me means an expensive meal. Plus would have to purchase jasmine rice....might pass. What's your recipe for Pulled Pork? I've never actually made it before! Again, because I think that buying a side of pork is pricey. Do you buy your fish and chips from M&Ms? So good! Maybe I'll blog my meal plan for this week've inspired me!

    Hey. Your food looks good. We ate Lentil curry one night, beef stew another and tonight we are having chicken drumsticks, coleslaw and leftover rice and peas (because the recipe always makes too much, even when I half it). I doubt I will cook on friday because I never cook on friday.
